This mortar and pestle is crafted from Aji stone, an extraordinary granite mined from the foothills of Mount Goken. The mountain gets its name from its distinctive peaks, likened to “five swords” (goken). The hardness of this unique speckled granite is softened into a pestle and a mortar, cooking tools used since the Stone Age.

AOISHIMA Inc., founded by artisan Chikara Ninomiya, specializes in crafting Aji stone, a granite variant known for its finely-woven crystals, bluish hue, and resilience. AOISHIMA upholds the 400-year legacy of this rare material with a high level of expertise throughout the entire production process, from mining to the creation of the final product.
